Guar Gum is a cold water soluble polysaccharide, and has broad uses in and other industries. The uses depend on the properties of very large molecules in various states of hydration, mostly in solution.   Guar Gum hydrates very easily to produce aqueous solutions possessing a high viscosity at low gum concentrations.These solutions are good emulsifiers and stabilizers because they prevent oil droplets from coalescing.  They may also have property of interfacial binding and thereby act as true emulsifiers.

Guar Gum is also used as a suspension stabilizer as it allows only slow settling because of its thickening power.  

Applications


Food Industry  

The largest use of Guar Gum is in food industry.  Its used as a thickener and a binder of free water in salad dressings, ice creams, sauces and many other applications like;  
Frozen Foods Guar Gum provides hydration and water binding properties  
Cheese lndustry Guar Gum increases the yield of solids and gives the curd a soft tender texture with a separated whey that is very clear  
Pie Fillings  
Pet Foods Guar Gum is used as a binder and lubricant in making of sausage and other meat products.   Guar Gum also allows 'pumping' of cooked product between kettle and filling vat and reduces splashing and spilling of contents while filling  
Baking- In cake mixings, Guar Gum allows single step mixing, reduced batter mixing time and less crumbling tendency in finished cake.  In bread making and baking goods it gives dough a greater resiliency and a drier and less flabby appearance  
Beverages Guar Gum is used as a stabilizer  
Topping and Icing Guar Gum gives greater moisture retention and prolonged shelf life  
Salad Dressing and Sauces Guar Gum is used as a thickener because of its ability to disperse in cold water, its compatibility with highly acidic emulsions and property if adding viscosity.  

Cosmetics and Pharmaceutical Industry

Guar Gum is used as a thickener.   Its also used as a binder and also to disintegrate compressed tablets.  It is also used as a mild laxative.  

Paper Industry  

Guar Gum is used for improved sheet formation, increased bursting strength, increased fold strength and to get a better finish.  

Construction  

Guar Gum is used as a waterproofing agent
